OUR PUMPKIN || There is always at least one dessert on the @homagerestaurant menu that is especially intriguing and challenging, and for the next three weeks this is it: pumpkin from the market garden, slow cooked in stock syrup and citrus to draw out that unmistakable sweet flavour, served with a deliciously nutty pumpkin seed ice cream and sweet, crunchy toasted pumpkin seeds. ASH MARTIN || @homagerestaurant, @spicershiddenvale, where much of the restaurant’s produce is grown on site, Ash’s team of chefs expertly tend, harvest, ferment, pickle, and smoke the contents of the flourishing market garden all year round, which this year has resulted in an undeniably special Autumn menu. The opening of the new Homestead - on the site of the original homestead destroyed by fire in 2018 - has seen Ash and the team elevate their cooking to a new level, bringing the Old Ways back with style. PUMPKIN || @spicershiddenvale is the place to go if homegrown produce is your thing. The Lockyer Valley, just an hour from Brisbane, is one of the world’s most fertile farming regions, and it’s where our @homagerestaurant chefs grow a large portion of their seasonal produce all year round in the 80+ bed Market Garden. Pumpkins are a fruit (yes, fruit!) that thrive particularly well there and are used in both savoury and sweet dishes. (Pumpkin soup followed by pumpkin pie, anyone?) A low maintenance and easy-growing gourd, they love warmer soil temperatures, which makes them perfect for most Aussie backyards. Next time you’re having pumpkin, throw some seeds in the ground and see what happens! ...

BROTH || This dish is the embodiment of everything Nick loves about Autumn cooking: a stunning combination of light, fresh and spicy with toasty, smoky, rich flavours to round it out. Tomato, onion, garlic and ginger are roasted until the skins are blackened, then an intensely flavoured turmeric broth is poured over silver pin noodles, fresh mushrooms and herbs. NICK STAPLETON || Autumn is a time for a little bit more comfort, layered clothes and snuggling under the doona, but it’s also when the sun is still warm, the mornings are crisp and the grass is wet and cold on your bare feet. TURMERIC || While we’re focusing on food throughout Autumn, we’d like to note that here at Spicers Retreats we haven’t forgotten about the romance -- and there’s no greater power couple than turmeric and black pepper. Not the most well-known duo, we’ll admit, but an undeniably unforgettable one. Once you know, you know - you know? Research suggests that pepper releases up to 2000 times the nutritional benefits stored up inside the turmeric root, and our own research suggests that it also tastes pretty amazing.
