Spicers Vineyards Estate & Tyrrells Wines Food v Vat Dinner

To celebrate Tyrrells Wines turning 160 years old, Restaurant Botanica at Spicers Vineyards Estate and the Tyrrells Wines family will be hosting a delectable five-course dinner with Tyrrells matched VAT wine series, wines which you can’t taste anywhere except for our exclusive event. 

The five-course degustation menu and wine match has been expertly crafted; 

Course One: Comté, artichoke, Semillon pear, truffled honey, roasted walnut tarator. 
Matched with: 2013 Vat 1 Semillon – ” A classic in the making, akin to the legendary 2005 & 2009 vintages.”

Course Two: Little hill farm chicken, coal roasted corn, corn beurre blanc.  
Matched with: 2014 Vat 47 Chardonnay – “Australia’s longest standing Chardonnay.”

Course Three: Hay roasted Celeriac, aged ham, celeriac jus, cheese oil. 
Matched with: 2017 Vat 63 Chardonnay Semillon – “Arguably the most unique wine Tyrrell’s produce.” 

Course Four: Braised short rib, barbequed young vegetables, oyster cream, malted beef sauce. 
Matched with: 2016 Vat 9 Shiraz – “An elegant Vat 9 in the vein of the great Hunter Burgundies of the past.”

Course Five: Dark chocolate cocoa, Muscat pears, pear sorbet. 
Matched with: 2014 Vat 8 Shiraz Cabernet – “A modern style of Australian red that respects tradition.”
