Chef Signature Experience

A visit to Restaurant Botanica is not complete without trying Head Chef Shayne Mansfield’s signature tasting experience. An ever changing menu that follows the ebb and flow of seasonal produce with a strong connection to the Hunter Valley. A vegetarian tasting menu is available and dietaries can be catered for.

  • Comte, artichoke, semillon pear, truffled Little Hill honey, roasted walnut tarator
  • Butter poached Fraser isle spanner crab, saffron rouille, bouillabaisse
  • Roasted swede, fennel, cured pork neck
  • Braised short rib, BBQ young vegetables, oyster cream, malted beer jus
  • Red wine balsamic strawberries, strawberry curd, shortcake, egg white

$110 per person | $165 pp with matched wines
