Homage Spring Cocktails 

Our cocktail selection like our food and wine are unashamedly Australian. We have created a list that takes inspiration from our kitchen, garden, and Australian producers. We have used classic bartending techniques to create a unique seasonal selection of drinks that complement our food, property and surroundings. Of course, we can create all of your favourite classics and are happy to build a drink that suits your preferences.

Grandchester 617 (flute)
Homage market garden fruit syrup, Flinders Peak gin, citrus from our orchard, spritzed with Australian sparkling rose.
Our play on a ‘French 75’. A Champagne cocktail, the perfect aperitif to start your night by the fire.  

Casia Collins (tall)
Lemons from our orchard, pomegranate, lavender, Ink gin.
A little like a Tom Collins, using local spirits, fruit from our orchard, flowers from our garden. 

Spring Caipirinha (short)
Cachaca, blood orange, limes from our orchard.
This is a classic South American cocktail with our Homage spin, ideal to enjoy in the sun by the infinity pool. 

Hidden Infinity (wine goblet)
Bison grass vodka, Quandong bitter liquor, lychee liquor, apple, Homage market garden lemon syrup, mint.
A real thirst quencher for the long hot days ahead, native Quandong brightens up this Australian version of Pimms. 

Passion Fruit & White Chocolate (martini)
Vodka, passion fruit, white chocolate.
Sweet white chocolate balanced with the sharpness of passionfruit.

Homage Barrel Aged Whisky (short)
Australian whiskey aged in our charred oak barrel, honey, orange & chocolate bitters.
Our play on an Old Fashioned, Australian Whiskey is aged in an American oak barrel on our bar top. Served straight from the barrel and balanced with honey from our honey bees.
