Chef Shayne Mansfield is taking the Restaurant Botanica menu and experience a to a new level with his extensive training, knowledge, passion & dedication to showcasing the best of local produce.
Being classically trained, Shayne has worked for some amazing fine dining restaurants both here and overseas. Shayne’s journey began working at the well known Brisbane restaurant, E’cco Bistro with Philip Johnson, from there Shayne ventured to London, where he worked with Jason Atherton, at the iconic City Social, which received a Michelin Star four months after Shayne’s arrival. After arriving back in Australia he started at The Long Apron at Spicers Clovelly Estate, under the tutelage of our Executive Chef Cameron Matthews, where he was a State Finalist for Electrolux Young Chef of the Year.
Shayne is forever in search of new local farms and producers within the local Hunter Valley region and in turn showcasing these incredible ingredients within his menus. The team at Restaurant Botanica is 100% focused on flavour and giving each of their guest’s wonderful dining experience.
