Our food philosophy at Restaurant Sebastian has been inspired by the techniques and flavours of Basque cuisine. Each dish heroes the outstanding quality of produce that the Hunter Valley is renowned for. Our team has created an experience to mirror the Basque’s intrinsic connection to food and wine, and the memories created when these moments are shared together.

Something Extra

Beverage on Consumption

If you wish to remove the beverage package, we can offer your beverages charged on consumption. A selection is available from our current wine list as well as the beverage package wines. Beverages will be charged per bottle opened to a limit set by the bride and groom.

Meet with our onsite sommelier to curate your personalized beverage menu, selecting your favourite blends and brews to enjoy on the night of your wedding.

Additional Information

Spicers Tower Lodge offers a maximum of seven hours of beverage service, with all beverage service ceasing by 11pm. Guests not staying onsite are required to depart by 11:30pm. All beverages listed in the packages are subject to change and based on availability. Our tailored beverage menu includes a selection of wines, beer and spirits of your choice, within the beverage allocation. At the conclusion of your beverage allocation, Spicers Tower Lodge will offer house beverage selections of similar blends and regions which will be charged on consumption.
