Our Head Chef’s favourite food at Christmas

“Pigs in Blanket”, delicious bacon wrapped sausages. Being from England, this is almost a staple in our diet!

My favourite Christmas food is simply smoked leg ham cut thick off the bone, charred on the bbq then drowned in hommus.

An Italian dish called Tagliata Di Manzo, my wife’s favourite. Basically, roasted marinated beef, carved over garlic & rosemary potatoes with rocket and parmesan dressed in a red onion and balsamic vinaigrette.

On Christmas my favourite food is a nice roast chicken with roast potatoes, carrots and all the trimmings. Growing up in England, this is how we did it at home and it brings fond memories of the spreads my Grandmother would make for us at Christmas.

My favorite food at Christmas is cheese. It’s is so versatile and can be used in so many ways. My favorite way is just on a platter with some home made lavosh and a sneaky glass of wine.

Borscht, which is a very popular soup in Eastern Europe. It’s a clear spicy beetroot consomme normally cooked over 2 days in my household and served with little porcini dumplings.

Breakfast the next day! Leftover baked ham with all the juices in the bottom of the pan with fried eggs along with a pesto made out of parsley, white anchovies, shallots, capers and lemon juice (it helps soak up all the wine from the day before!).
