Sam’s Spicy Gingerbread


300g almond meal
1 tbs fresh ginger (finely grated)
1 tbs nutmeg
1/2 tsp fresh tumeric
1/4 cup coconut oil, melted
2 tbsp good honey
1 egg
1/2 tsp baking powder
1/2 vanilla bean



1. Mix all the dry ingredients together until well combined

2. Blend the vanilla, coconut oil, honey and egg together until combined and pale

3. Fold the wet mixture into the dry and mix until well combines into a dough

4. Between two sheets of grease proof paper roll out the dough to roughly 5-6 mm thick and let rest in the fridge for 30 minutes.

5. After resting cut your dough into desired shaped and bake in an oven preheated to 160 degrees for 10-15 minutes
