Bavay Distillery and Spicers Retreats unveil their exclusive range of small batch seasonal gins. Bavay Distillery’s expert mixologists have created four seasonal gins inspired by Spicers Vineyards Estate (summer), Spicers Sangoma Retreat (autumn), Spicers Hidden Vale (winter) and Spicers Tamarind Retreat (spring).
Each blend – Spring Time, Summer Rays, Autumn Dry and Winter – is a unique representation designed to capture the season using tasting notes like macadamia, strawberry gum, hibiscus and Szechuan pepper.

This summer gin is heavily citrus driven and inspired by Spanish horticulture, bringing together notes of Valencia oranges, lemon verbena and olives.
Spicers Sangoma Retreat was named after the Zulu word for healer. Paying homage to the origin of this name, Autumn Dry heroes the ancient medicinal herb fenugreek, which is commonly grown in Africa. Its rich notes of maple are supported by the rejuvenating flavour of ginger and sumac, bringing a warm autumn feel to this gin.

This gin is a celebration of native Australian botanicals grown in our region, embodying a ‘paddock to bottle’ ethos.
